Artisan Dry Cured Bacon recommendation

I am frying up a pound of bacon from Vande Rose Farms and liking it so much I want to recommend it. It is not the stuff we are used to, for one, I’m getting very little fat from it. One slice of bacon usually releases enough fat for cooking up my onion, broccoli and mushroom one-egg omelet but not this. Plus the flavor is richer, not so salty but more meaty. I want to eat up the whole pan! But must save some for omelets for another day…

The farm has a line of other products; not sure where I got this at the moment as I shop at HyVee, Good Food Store and even Trader Joes might have had this. I’m going to figure it out so I can buy some more!
